Vanjaram (Seer/Surmai Fish) Pollichathu Ingredients: For Marinate Seer Fish - 2 Slices Turmeric powder - 1/2 tsp Chili powder - 1 tsp Pepper - 1/2 tsp Salt For Onion Masala Coconut oil 1 to 2 Tbsp Onion - 3 nos (chopped) A piece of ginger, Few cloves of garlic Green chili - 1 no. Turmeric powder - a pinch Chili powder - 1/2 tsp Tamarind puree - 1/2 cup Salt Few Coriander leaves Coconut oil Banana Leaf String / thread Method: 1. first marinate the fish slices with Turmeric powder, Chili powder, Pepper & Salt for 10 to 15 minutes 2. Heat coconut oil. Saute onions till light brown 3. Add freshly pound ginger, garlic and green chili. Add turmeric powder, chili powder, tamarind puree, salt and coriander leaves. Saute till golden brown 4. Transfer the contents. Use the same pan to fry the marinated fish slices (till half cooked) with little coconut oil 5. Place a banana leaf and sandwich the fish slices in between the onion masala. 6. Wrap the leaf and secure with a string or thread 7. Close and cook the leaf wrapped fish for 5 minutes 8.
