Chettinad Potato Fry
Ingredients
Boiled Baby Potatoes - 15 to 20
Onion - 2 finely chopped
Salt to taste
For Chettinad Masala
Urad Dal - 2 tsp
Red Chilli - 5
Pepper - 1 tsp
For Tempering
Oil - 2 tbsp
Urad Dal - 1/2 tsp
Chana Dal - 1/2 tsp
Cumin seeds - 1/4 tsp
Mustard seeds - 1/4 tsp
Asafoetida powder - 1/4 tsp
A few Curry leaves
Method:
1. First step Dry roast the Urad Dal, Red Chilli & Pepper, till it turns golden brown colour.
2. Cool it & Grind it into a fine powder. Chettinad Masala powder is ready.
3. Heat Oil in a pan. Add ingredients for tempering Urad Dal, Chana Dal, Cumin seeds & Mustard seeds. Once the Mustard seeds starts splattering add the Asafoetida powder & saute it.
4. Then Add Onions & Curry leaves, saute the onion for few minutes.
5. When the Onion turns transparent add the Boiled Baby Potatoes, Salt & Chettinad Masala powder.
6. Mix it well, till all the Potatoes are coated well with Masala powder.
7. Roast it for few minutes & then turn off the stove.
8. Serve hot with Rice.
