Aloo Tamatar Sabzi Ingredients: Potato - 4 nos Cut in to big cubes. Let it soak in water to avoid browning Oil - 3 tsp Cumin seeds - 1/2 tsp Few Fenugreek seeds Onion - 1 no. chopped Green chili - 2 nos Garlic - 4 cloves Piece of Ginger Tomato - 1 no. chopped Turmeric powder - 1/4 tsp Chili powder - 1 tsp Cumin powder - 1 tsp Coriander powder - 1 & 1/2 tsp Asafoetida powder - 1/4 tsp Salt Tomato puree - 1 no. Garam Masala Powder - 1/4 tsp (Optional) Amchur (Dry mango) powder - 1/4 tsp Few Coriander leaves Method: 1. Heat oil. Add cumin seeds, fenugreek seeds & onion. Saute till its light brown in colour. 2. Add freshly pound green chilis, garlic and ginger. Add tomatoes and the spice powders (turmeric powder, chili powder, cumin powder, coriander powder, Asafoeteda powder) & salt. mix well 3. Add the potato pieces and mix well to the masala. 4. Add tomato puree & some water. Let it cook till it start to boil. 5. Close and pressure cook. 6. As a finishing touch, add garam masala powder & aamchur powder (optional). Mix well. 7. Check for seasoning & Garnish with coriander leaves 8. Serve with Hot poori or chapati.
